Romaine Lettuce Spring Rolls

Spring rolls are so named because they are traditionally served on the first day of the Chinese New Year, which is in early spring. The spring roll is more delicate and lighter than traditional egg rolls. A rice wrapper is generally used, but this version is wrapped in a romaine lettuce leaf. The dipping sauce is a great accompaniment.

1 oz. rice vermicelli noodles
1 Tbsp. sesame oil
1 tsp. fresh ginger, grated
2 scallions, cut into fine strips
1 medium carrot, cut into fine strips
2 oz. snow peas, cut into fine strips
2 oz. fresh bean sprouts
1 Tbsp. fresh mint, chopped
1 Tbsp. fresh cilantro, chopped
6 romaine lettuce leaves, rinsed and patted dry
6 wooden thin bamboo skewers, 10-inch

For the misoyaki sauce:

1/4 cup yellow miso
1/2 cup water
1/2 cup mirin (Chinese rice wine),
1 Tbsp. cornstarch seeded and chopped

For the dipping sauce:

1/4 cup super-fine sugar
1/4 cup rice vinegar
2 Tbsp. water
2 fresh red chilies, seeded and chopped

For the misoyaki sauce, place the miso in a medium-sized bowl. Heat 1/4 cup water and add to miso to form a paste. Add 1/4 cup mirin to the paste and blend. In a small saucepan, add the cornstarch, remaining water and remaining mirin. Heat and whisk constantly. Bring to a boil and simmer until thickened. Remove from heat. Add the miso paste and cool. For the dipping sauce, place the sugar, vinegar and water in a small saucepan. Bring to a boil to form a light syrup. Stir in the chilies and let cool.

Soak the noodles as instructed on package. Rinse and drain well. Using scissors, cut the noodles into 2-inch lengths. In a heated wok, add the oil. When hot, add ginger and scallions. Stir-fry for 15 seconds, then add the carrot and snow peas. After 1 minute, add bean sprouts, then noodles and misoyaki sauce. Stir-fry for 1 more minute then cool. Prepare lettuce leaves. Fill a lettuce leaf with 2 tablespoons of filling. Fold up the sides over the filling. Insert bamboo skewers, weaving through lettuce leaf. Serve with dipping sauce.
